The new JH Elk Antler Santoku is made with our signature S35VN powder metal steel and Jackson Holel harvested handle materials. Its hidden tang is secured with the same adhesive that holds fighter jets together. And the antler handle has been vacuum inpregnated to secure its longevity.

The Santoku uses a traditional Japanese knife shape that has become the hottest thing in kitchen cutlery. * No elk were harmed in the harvesting of the handle material. Elk shed their antlers every year. These handles are made from these sheds and then stablized to ensure long lasting durability.
*Because of the uniqueness of each elk and their sheds, every antler handle will have some variance in color, texture and appearance.
