For years our customers have asked us to make an elk antler handle on a chef knife. That time has finally come. The new JH Elk Antler Santoku is made with our signature S35VN powder metal steel and Jackson Holel harvested handle materials. Its hidden tang is secured with the same adhesive that holds fighter jets together. And the antler handle has been vacuum inpregnated to secure its longevity.

We are extremely proud of this knife as it achieves a perfect harmony of the world's best cutlery steel with nature's raw beauty.

The Santoku uses a traditional Japanese knife shape that has become the hottest thing in kitchen cutlery. The Santoku chef knife is a "Jack-of-all-trades" kitchen knife for both the home and professional kitchen. The dimple grinds on the Santoku chef knife make it easier to slice meats and vegetables paper thin without tearing them. They also keep food from sticking to the side of the blade. The Santoku is the ultimate balance of Eastern and Western knife design.

* No elk were harmed in the harvesting of the handle material. Elk shed their antlers every year. These handles are made from these sheds and then stablized to ensure long lasting durability.

*Because of the uniqueness of each elk and their sheds, every antler handle will have some variance in color, texture and appearance.
