Evan Davis makes knives out of the Santa Cruz Mountains under the name Enceladus Cutlery — a nod to Saturn's small, brilliant, ice-covered moon, and to Davis's own background studying planetary geology before he came home to build knives full-time. That scientific eye shows in the work: precise, deliberate, built for cooks who actually want to be in the kitchen more.
This 6" Nakiri is forged from 1084/15N20 Damascus, folded into a tight, flowing pattern suited to the vegetable-forward, straight-down chopping style the Nakiri shape is built for. The handle pairs black G10 with walnut burl — a practical, food-safe material next to a natural one with real figure and character, riveted together for a grip that's stable in hand and distinct to the eye.
Sourced directly from Davis by our custom knife buying team at Blade Show 2026, this Nakiri is a rare chance to own a piece from a young maker whose reputation is only building.

This is a one-of-one piece from an independent custom maker, built with materials that deserve a little extra attention.
- Hand wash only. Wash by hand with warm water and mild soap immediately after use, then dry completely before storing. Never put this knife in the dishwasher.
- This is a high-carbon Damascus blade (1084/15N20) and will patina over time — it is not stainless. Dry it fully after every use, and apply a light coat of mineral oil or knife oil if it won't be used for a while. A developing patina is normal and part of the character of carbon steel; it is not a defect.
- The walnut burl half of the handle is a natural wood material. Avoid prolonged soaking or exposure to extreme heat, which can dry or crack the wood over time. The black G10 half is low-maintenance and food-safe.
- Store in a dry place, away from direct sunlight, ideally in a sheath or blade guard if one is included.
