Enter the Steph Knife—our collaboration with Iron Chef champion, James Beard Award winner, and founder of Chicago and L.A’s iconic Girl & the Goat, Chef Stephanie Izard. Over 18 months of design, testing, and refinement went into building a knife worthy of one of America’s most dynamic and decorated chefs. Our goal? To make a G.O.A.T. 8” chef knife—the greatest of all time—for a chef who lives up to the name.

Designed for real kitchen life—fast-paced, detail-oriented, and full of flavor—the Steph Knife blends the cutting precision of Japanese blades, the durability of Western design, and the aesthetic artistry that defines every New West KnifeWorks creation.

At its core is MagnaCut steel, a next-generation stainless alloy that offers elite edge retention, true stain resistance, and incredible toughness—all in a thinner, sharper profile. With a 15° edge angle and 0.012" edge thickness, it glides through prep like a scalpel but holds up under pressure.

The G10 handle is the product of extensive iteration, shaped through rounds of feedback from Chef Izard herself. Its sculpted, 3D-contoured form fits naturally in both hammer and pinch grips, providing a secure, intuitive feel in hand.

Designed for versatility, the 8” blade merges the broad, scooping-friendly height of a Santoku with the classic length and agility of a Western-style chef kniferedefining what an 8” blade can be

Use & Care

  • Hand wash with warm soapy water and hand dry for maximum edge retention and stain resistance. For safety and edge protection, store dry knives in their leather sheath, in a wood block, or on a magnet designed to hold knives. For a full tune-up: free lifetime sharpening.
  • Do not put in the dishwasher - this will dull the knife.
  • For edge retention, cut only on wood or softer plastic cutting boards.
  • As needed, apply a light coat of mineral oil to the handle with a soft cloth to enhance vibrance.

Izard also won the coveted title of Iron
Chef in 2017 and was the 4 th winner of Bravo’s Top Chef. Izard jumped back
into television in 2023 with the release of The Curious Chef, a Tastemade
television series where she visits home cooks to get a taste of their time-
honored recipes and traditions, alongside numerous appearances, as both a

A James Beard Best New Restaurant nominee, Girl & the Goat has been
