Martin Huber was raised into the trade — his grandfather was a blacksmith, and both parents worked in mechanical and automotive engineering. He was introduced to the forge at age three, trained formally as a blacksmith and metal sculptor at HTL Steyr, and made his first Damascus kitchen knife as a gift for his mother — a knife she still uses today. In 2016, Huber opened his own shop in Garsten, Austria, and has since built a reputation serious enough that he now employs a small team to keep pace with demand from chefs and collectors worldwide.
This 7" Gyuto carries Huber's "Silverline" construction — a San Mai build with a core of 1.2419 tungsten tool steel, forge-welded between softer outer layers for a blade that pairs a hard, edge-holding core with the resilience of its cladding. The Gyuto shape is the workhorse of the set — a Western-style chef's knife built for continuous cutting motion. The handle is buckeye burl, its clustered, eye-like grain set off by a black G10 bolster for a grip that's stable in hand.
Sourced directly from Huber by our custom knife buying team at Blade Show 2026, this Gyuto arrives with a protective blade sheath, ready for the cutting board.

This is a one-of-one piece from an independent custom maker, built with materials that deserve a little extra attention.
- Hand wash only. Wash by hand with warm water and mild soap immediately after use, then dry completely before storing. Never put this knife in the dishwasher.
- This blade's cutting core is 1.2419 tungsten tool steel, a high-performance carbon steel, and can patina or rust if left wet. Dry it fully after every use, and apply a light coat of mineral oil or knife oil if it won't be used for a while. A developing patina along the edge is normal and part of the character of this construction; it is not a defect.
- The buckeye burl handle is a natural wood material; the G10 bolster is low-maintenance and food-safe. Avoid prolonged soaking or exposure to extreme heat, which can dry or crack the burl over time. An occasional light coat of food-safe mineral oil will help maintain its finish.
- Store in the included blade sheath, in a dry place, away from direct sunlight.
