Description

Elk don't grow antler to a spec, and this knife doesn't pretend otherwise. Every handle starts as a naturally shed piece of elk antler, hand-selected down to the eighth of an inch for size, straightness, and condition, then shaped and fit flush against a brass bolster that's been individually machined to match its own tang — flush enough that no hard edge catches a working finger during extended use. The grain runs pale to deep chocolate depending on the piece, and no two ever come out the same. That's not a compromise — it's the closest thing to a one-of-one this line makes. If you're buying for someone who already has one of everything, this is the one they don't.

The butt of the handle is cut at a 45° angle instead of left square. That angled cut takes the bulk out of the grip so it doesn't feel blocky in hand, without changing the front of the handle where your fingers actually grip. The design is built toward ambidextrous use, consistent with the rest of the New West lineup.

The blade is CPM MagnaCut®: next-generation particle metallurgy steel built for edge retention, toughness, and corrosion resistance in equal measure. It's a drop point blade with a satin finish that catches the light without shouting about it, laser-etched with the NWKW mountain logo and wordmark, at a compact 3.5" blade / 8" overall — sized to pack easily and built to do real work. It carries the same profile as the standard Outfitter — the shape that's field-dressed elk across the Snake River Range for years, developed with local professional outfitters and proven in real backcountry conditions, not a lab. A choil keeps resharpening simple, and where a plain ricasso would sit, this build gives you brass instead — the transition from blade to handle done in a material that earns a second look. This isn't a knife that asks you to take its word for it — pick it up and it'll make its own case.

The blade is CNC-ground and the bolster is machined first. From there, one individual knife maker takes over — fitting the antler, gluing, and hand-polishing the brass to a warm shine before sharpening every piece by hand. No assembly line, no division of labor at the assembly stage. Every handle's grain, color, and shape came from a specific animal, in a specific season, in high country nobody's renaming for a catalog — that provenance doesn't repeat, and neither does the knife.

The Elk Outfitter comes in a fitted leather sheath rather than Kydex. The thicker brass bolster calls for it — rugged, timeless, and right at home beside antler and brass.

This is functional art with a job to do: durable enough for a backcountry pack-out, striking enough to earn a second look anywhere else. Set it on a table and people will pick it up before they ask what it's for. Pack it out on a hunt. Carry it into town after. Either way, it's the knife people ask to hold.

Use & Care

Hand wash with warm soapy water and dry thoroughly after each use — this knife sees blood and moisture in the field, and both the antler handle and leather sheath last longest when kept dry. Let the sheath air dry fully before long-term storage.

As needed, apply a light coat of mineral oil to the antler handle with a soft cloth. This keeps the material from drying out and brings out its natural grain — the same care we recommend for our Ironwood handles.

The brass bolster will develop a natural patina with age and handling. If you'd rather keep it bright, a standard metal polish will restore the shine — either way is right.

For a full tune-up, this knife is eligible for free lifetime sharpening. Drop it by a store or ship it our way.

The New West Difference

The New West Difference

Built to Outlast the Hunt

The Elk Outfitter runs on CPM MagnaCut®, a next-generation stainless steel built for edge retention, toughness, and corrosion resistance in equal measure. It holds an edge through a full field dressing and shrugs off blood, moisture, and hard use — no matter how long it sits in a pack before cleanup.

No Two Alike

Every handle begins as a piece of elk antler, naturally shed and hand-selected down to the eighth of an inch for size, color, and condition. Grain runs pale to deep chocolate depending on the piece — no two ever come out the same, making each knife a genuine one-of-one.

A Dignified Upgrade

In place of a standard ricasso, the Elk Outfitter is finished with a brass bolster machined to the thousandth of an inch and hand-matched to its own blade tang — a functional upgrade finished like a piece of jewelry, brass that earns a second look.

Field to Formal

A fitted leather sheath — chosen because the brass bolster runs too substantial for a standard Kydex fit — carries the Elk Outfitter from the backcountry to wherever the day takes you next. Every knife ships backed by New West's Lifetime Guarantee and free sharpening for life.
