Description
Description
Before the factory, Corey Milligan showed his handmade knives at art shows nationwide. New West KnifeWorks is built on his conviction that a tool can be beautiful AND built to work hard every day. Maker’s Mark is the embodiment of that idea: small-batch releases, each knife finished by an individual maker, each handle its own.
Born in the quiet hardwood forests where ash trees spend decades twisting knotted burls into wild, swirling grain, each handle in the Maker’s Mark Ash Burl Collection carries a pattern no other knife will ever share.
Once this batch is gone, it’s gone. Showcased here is the 6" Deli blade you already know: CPM S35VN particle metallurgy steel, the best combination of sharpness, toughness, edge-holding, stain resistance, and sharpenability on the market.
One knife maker oversees the process from start to finish: fitting the handle, hand-finishing the choil and spine, and sharpening the blade before it leaves our factory in Victor, Idaho. Every knife is built to be used, trusted, and passed down for generations.

Use & Care
Use & Care
- Hand wash with warm soapy water and hand dry for maximum edge retention and stain resistance. For safety and edge protection, store dry knives in their leather sheath, in a wood block, or on a magnet designed to hold knives. For a full tune-up: free lifetime sharpening.
- Do not put in the dishwasher - this will dull the knife.
- For edge retention, cut only on wood or softer plastic cutting boards.
- As needed, apply a light coat of mineral oil to the handle with a soft cloth to enhance vibrance.
