A Night with Slow Food in the Tetons

Slow Down, Savor More

Slow Down, Savor More

At New West KnifeWorks, we believe a knife is more than a tool—it’s an invitation. To slow down. To savor. To gather with the people you love around food that nourishes body and soul.

That’s why we were proud to once again support the Slow Food in the Tetons annual fundraiser dinner—an evening that reminds us what real food and real community look like.

An Evening of Local Flavor

Hosted at Canewater Farm in Victor, Idaho, this year’s dinner was crafted by Chef “Gator” Guilbeau of Yellowstone fame, using only locally sourced ingredients. From field-fresh vegetables to regional meats and cheeses, every bite told the story of the valley’s farmers and ranchers.

More than a fundraiser, the evening raised awareness for Slow Food in the Tetons and its mission to create a food system that is good, clean, and fair. It’s a vision we share: making what we use and what we eat with care, purpose, and connection.

Knives That Remind Us to Slow Down

Cooking with a knife you love changes everything. It invites you to take your time—slicing vegetables with precision, carving meat with care, creating a meal that’s more than fuel. It’s art. It’s craft. It’s family.

That’s why Chef Gator cooked this incredible feast using New West KnifeWorks knives, designed right here in Jackson Hole. Because just like local food, a great knife connects you back to the source: the maker, the land, and the tradition.

To the donors, volunteers, and community members who made this year’s fundraiser possible—thank you. Your support ensures that the values of good, clean, and fair food continue to grow in our valley and beyond.

At the table, in the kitchen, or out in the field: let’s keep slowing down, savoring, and celebrating what really matters.
