"The perfect balance of power and grace." - Bon Appetit

The Petty is the ultimate kitchen utility knife. In order to survive in the kitchen, they say you really only need two kitchen knives: a paring and a chef. The G-Fusion Petty utility knife challenges that notion by taking on both roles. This classic Japanese blade shape works great as a peeling, paring, boning and carving knife for vegetables, fruits, herbs and other delicate work. However, it will also take on some of the slicing and dicing jobs of a large chef knife. This versatile style is a favorite among professional chefs.

This is everyone's favorite knife. It's a do-everything-else knife for pros and the go-to knife for home users who aren't comfortable with a larger blade. The perfect gift for a cook no matter their ability.

What is a utility knife for the kitchen? In between the two essential knives for any chef - a chef knife and a paring - is a utility knife. Learn more about utility knives and why they are essential to both the professional and home kitchen here: About Kitchen Utility Knives.

S35VN: America's best steel
Like cooking, making knives depends on using the best ingredients. The G-Fusion line features the highest performing knife steel on the market-- S35VN “Powder Metal” steel. This high carbon, alloyed steel has it all: elite sharpness, toughness, edge-holding, stain resistance and sharpenability. G-Fusion knives are made in the US with American steel and backed by a lifetime guarantee.

Desert Ironwood

**Please note: this is a natural material and each handle will have it's own unique grain patterns**

As the first major addition to our chef knife collection since switching to G10 handles for our "G-Fusion" line, New West KnifeWorks is proud to offer our line of Desert Ironwood S35VN chef knives. After months of testing various hardwoods and laminate woods for durability, water resistance, and overall look and feel, the richly textured desert ironwood rose to the top.
Because desert ironwood grows in such water-depleted environments, its grain structure is incredibly dense (so dense that it sinks in water), which leads it to have incredible strength and durability. In fact - this wood is so hard that it takes more material and time for our production team to get the scales shaped into New West' smooth and ergonomic knife handles.
To care for this material, we recommend avoiding harsh soaps or solvents on the handle (a little dish soap now and then is fine). The deep colors and rich shine quickly come back to life with a bit of mineral oil applied with a rag. No lacquer or sealant is applied to the ironwood, so it will readily absorb the oil and look shiny and new all over again.

What our Friends are Saying:

Bon Appetit, "We find ourselves reaching for a petty knife as much as, if not more often than, the beloved chef’s knife."
Food In Jars, "It is the knife I'd been hoping for."
The Americanologists, "The blade was razor-sharp and cut through the meat like 'Buttah' as we say in these parts."

Joe W. (Henrico, VA.), "[The Petty's] razor sharpness, large, comfortable handle and feather weight have drawn comments from young and experienced cutters alike. From rolling out a boneless pork loin for stuffing to fluting mushrooms, the Petty makes short work of it."
