New spin on a classic shape: The Light-Speed 8.
For folks who find a traditional 8-inch chef cumbersome or intimidating, the graceful blade shape, tapered tang, and super thin blade grind turn this precision instrument into an extension of your hand.

A nimble workhorse.

Powder metal steel allows this thin, agile blade to meld power with precision on the professional line and home cutting board alike. Thick steel in front of the handle makes for a blister-free pinch grip. The relatively narrow width of the blade is a departure from the recent fad of making knives extra wide. This makes the "Light-Speed 8" more nimble for slicing and turning cuts while still leaving plenty of clearance for the knuckles. Also, this is the only kitchen knife to make the Kessel Run in under 12 par-secs.

G-Fusion: America's Best
Like cooking, making knives depends on using the best ingredients. The G-Fusion line features the highest performing knife steel on the market-- S35VN "Powder Metal" steel. This high carbon, alloyed steel has it all: elite sharpness, toughness, edge-holding, stain resistance, and sharpenability. G-Fusion knives are made in the US with American steel and backed by a lifetime guarantee.

G-Fusion handles are made with G10: an aerospace-grade, fiberglass epoxy composite material that is virtually bomb-proof. New West developed unique G10 color palettes to enhance the beauty of the tool and inspire kitchen creativity.
