The Teton Edge Santoku
The chef knife for any home or professional kitchen. A full size chef knife that is lightweight and agile with a broad enough blade for scooping food from the cutting board. Unlike other brands, New West's Santoku features a generous curve to accommodate chopping. The “Teton Edge” replaces the traditional santoku “dimples” with an etched semblance of the Teton Mountain range. As with the dimples, the etching helps the blade slice smoothly through food without sticking- but the Teton Edge does it even better. New West's Santoku is a NY Magazine "Best Bet", a pick of Saveur 100, and a favorite of Iron Chef, Alex Guarnaschelli, who said the Santoku "makes me feel like I can achieve anything."

Ironwood Handle
After months of testing various hardwoods and laminate woods for durability, water resistance, and overall look and feel, the richly textured desert ironwood rose to the top. Because desert ironwood grows in such water-depleted environments, its grain structure is incredibly dense (so dense that it sinks in water), which leads it to have incredible strength and durability. In fact - this wood is so hard that it takes more material and time for our production team to get the scales shaped into New West’s smooth and ergonomic knife handles.
