The JH Hunter/Forager is a chef's hunting/foraging/camp knife. We have taken everything we know about kitchen knives, the hardest working knives there are, and applied it to our outdoor/hunting knives. Our home, Jackson Hole, WY is a premier big game hunting nexus of the lower 48.

This knife makes a great all-around belt or camp knife with its time-tested saddle leather sheath. This is the perfect foraging knife, quickly and effectively deployed for cutting wild morels or chanterelles or skinning elk and deer. This is a great general outdoors knife, from whipping up raft trip or campsite breakfasts to butchering livestock on the farm. Jackson Hole cowboys use it for castrating steers and testify that "It will cut balls all day long."

Rocky Mountain Tested
The blade is made from CPM S35VN, the highest performance knife steel in the world. Nothing else matches its combination of edge holding, toughness, stain resistance, and sharpenability. The blade features our 2.0 blade design, which starts with a thick piece of steel (.175") then plunges into a thin blade (.095"). Most hunting knives are made with overly thick blades that are good for showing off and stabbing dirt but not very good for cutting meat. Our thin blade cuts through flesh, sinew, and skin like butter but will hold up to any challenge without breaking or chipping. Also, the 2.0 design features a tapered tang to give the blade excellent balance.

Full-sized handle
The JH Hunter/Forager has a full-sized handle that is comfortable, whether it is held in a pinch grip like a chef or with a more traditional grip. The large size and handle shape allow for a secure grip even when covered in blood and guts. The handle is the same size as our Chopper and Petty knives which have stood up to years of hard use in kitchens everywhere.

Desert Ironwood
As the first major addition to our chef knife collection since switching to G10 handles for our "G-Fusion" line, New West KnifeWorks is proud to offer our line of Desert Ironwood S35VN chef knives. After months of testing various hardwoods and laminate woods for durability, water resistance, and overall look and feel, the richly textured desert ironwood rose to the top.

Because desert ironwood grows in such water-depleted environments, its grain structure is incredibly dense (so dense that it sinks in water), which leads it to have incredible strength and durability. In fact - this wood is so hard that it takes more material and time for our production team to get the scales shaped into New West's smooth and ergonomic knife handles.

To care for this handle material, we recommend avoiding harsh soaps or solvents on the handle (a little dish soap now and then is fine). The deep colors and rich shine quickly come back to life with a bit of mineral oil applied with a rag. No lacquer or sealant is applied to the ironwood, so it will readily absorb the oil and look shiny and new all over again.
