The only thing this set is missing -is a camp fire and a trout on the line. Our favorite Fillet Knife and wickedly sharp Bird & Trout, will delight any angler who's eager to clean and cook their fresh catch. The Western Chef, can handle anything else you may have at camp or in the kitchen.
The Western Chef
A nod to our Jackson Hole roots that combines a hefty, Western design with elite steel. Serve up gourmet grub at camp with a clip-point blade that’ll make a grizzly (or sous chef) think twice about sticking their nose in your skillet. Japanese blade-making favors light-weight, super-sharp blades for agile slicing. The Western Chef is about heft and power, sporting a heavy, almost cleaver-width blade for hacking, chopping, and dicing. Given the choice, if your hands itch for a two-handed broadsword rather than a rapier- look no further- this knife is for you. Keep it in your knife roll or wear it on your chaps, the Western Chef will have you ready for rodeo when things get Western in your kitchen. Learn more about the Western Chef.
The Fillet
S35VN powder metal is the highest performing steel for a fillet knife. Extreme sharpness and toughness combined allow for a thinner, sharper blade that can bend without breaking or losing its shape. The thin blade is seven inches long and has a multi-stepped taper for optimal flex. The geometry of the blade is designed to match the curve of a fish, with length enough for the deep bones of any animal. The long slicing stroke is stabilized by a full tang. The Bird & Trout
The leaf-like blade shape gives the knife an unrivaled point, making it easy to puncture the toughest of skin with surgical precision. The Bird and Trout really outclasses the field when skinning smaller animals (rabbit, muskrats, beaver) and gutting fish due to the 2.64” blade length. Our knives are field-tested by Jackson Hole’s finest anglers, hunters, and trappers to ensure they meet our highest production and in-the-field standards. The lightly curved and tapered handle gives an exceptional grip when the knife is upside down gutting a trout or right side up breasting out a grouse. Learn more about the Bird & Trout.
