For the Professional or Serious Home Chef: The 4pc Executive Chef Pro Set.
Now available in rustic Ironwood, the "Executive Chef Set" includes New West's biggest all-purpose chef knife, the Chris Kidder Special, our uniquely serrated Superbread Knife, the fiercly beautiful Teton Edge Santoku, and our most versatile detail-work knife, The Petty. This is the ultimate set for the professional Chef or serious home cook who likes to have the right tools for every job. Backed by our Lifetime Guarantee, these American-Made chef knives turn prep work into performance art. Life is too short for dull knives.
The Chris Kidder Special is the ultimate chef knife for those with skill to wield it. At the perfect length for slicing everything from sushi to red meats, soft ripe vegetables or crusty bread, this knife can perform all the chopping, dicing and general purpose work of a chef knife while having the added length to cleanly slice the softest food in one long stroke. Unique design aspects include that the spine does not taper for the first 4" of the knife length which maintains the right amount of stiffness for chopping. Additionally, the wider blade width ensures that Chef's knuckles won't hit the cutting board when chopping.
Our 9” SuperBread Chef Knife is a 100% New West KnifeWorks signature design. As a bread knife it has unparalleled ability to slice crusty, flaky, or delicate baked goods without the same crumbling effect of lesser bread knives. Much more than just a bread knife, this is the ultimate slicer for meats, tomatoes, gravlax, and any other soft food that has a tendency to crush when sliced. Because the edge cuts so aggressively, many chefs use this as their primary knife for prep work as it will cut through a crate of vegetables with virtually no effort. Our unique 'wave' serration gives you an incredibly sharp edge and has the unique capacity to be honed and fully sharpened using a ceramic steel.
The Teton Edge Santoku is a chef knife for any home or professional kitchen. A full size chef knife that is lightweight and agile with a broad enough blade for scooping food from the cutting board. Unlike other brands, New West's Santoku features a generous curve to accommodate chopping. The “Teton Edge” replaces the traditional santoku “dimples” with an etched semblance of the Teton Mountain range. As with the dimples, the etching helps the blade slice smoothly through food without sticking- but the Teton Edge does it even better. New West's Santoku is a NY Magazine "Best Bet", a pick of Saveur 100, and a favorite of Iron Chef, Alex Guarnaschelli, who said the Santoku "makes me feel like I can achieve anything."
The Petty is the ultimate kitchen utility knife. This classic Japanese blade shape works great as a peeling, paring, boning and carving knife for vegetables, fruits, herbs and other delicate work. However, it will also take on some of the slicing and dicing jobs of a large chef knife when you don't want to switch back and forth. Professional chefs swear by its versatility. Our Petty was described by Bon Appetit as "the perfect balance of power and grace."
**Please note: this is a natural material and each handle will have it's own unique grain patterns**
As the first major addition to our chef knife collection since switching to G10 handles for our "G-Fusion" line, New West KnifeWorks is proud to offer this line of Desert Ironwood S35VN chef knives. After months of testing various hardwoods and laminate woods for durability, water resistance, and overall look and feel, the richly textured desert ironwood rose to the top.
Because desert ironwood grows in such water-depleted environments, its grain structure is incredibly dense (so dense that it sinks in water), which leads it to have incredible strength and durability. In fact - this wood is so hard that it takes more material and time for our production team to get the scales shaped into New West' smooth and ergonomic knife handles.
To care for this material, we recommend avoiding harsh soaps or solvents on the handle (a little dish soap now and then is fine). The deep colors and rich shine quickly come back to life with a bit of mineral oil applied with a rag. No lacquer or sealant is applied to the ironwood, so it will readily absorb the oil and look shiny and new all over again.
