The superhero of bread knives.
The Superbread is a New West KnifeWorks signature design. Most bread knives leave no room for the knuckles which means one of two things: either you're forced to slice near the edge of the counter or you risk bruising your knuckles. The Superbread is shaped more like a chef knife so it leaves plenty of knuckle room AND allows much better control than lessor offset bread knives. Finally, a unique 'wave' serration gives an incredibly sharp edge that can be honed and fully sharpened using a ceramic rod.

So much more than a bread knife.
While the Superbread performs heroic deeds on bread, its superpowers extend far beyond the breadbasket. This is the ultimate slicer for meats, tomatoes, gravlax, and any other soft food that tend to crush when cut with a straight-edged knife. Because of its aggressive smooth edge, some chefs actually use this mighty artifact as their primary knife for prep work as it cuts through a crate of vegetables with very little effort.

Timeless Desert Ironwood
As the first major addition to our chef knife collection since switching to G10 handles for our "G-Fusion" line, New West KnifeWorks is proud to offer our line of Desert Ironwood S35VN chef knives. After months of testing various hardwoods and laminate woods for durability, water resistance, and overall look and feel, the richly textured desert ironwood rose to the top. These richly grained handles and super sharp blades will impress the most selective chef knife aficionados.

Because desert ironwood grows in such water-depleted environments, its grain structure is incredibly dense (so dense that it sinks in water), which leads it to have incredible strength and durability. In fact - this wood is so hard that it takes more material and time for our production team to get the scales shaped into New West' smooth and ergonomic knife handles.

To care for this material, we recommend avoiding harsh soaps or solvents on the handle (a little dish soap now and then is fine). The deep colors and rich shine quickly come back to life with a bit of mineral oil applied with a rag. No lacquer or sealant is applied to the ironwood, so it will readily absorb the oil and look shiny and new all over again.
