In the past 30 years, the United States has been the world leader in development of the highest quality and performance steel to keep pace with technology requirements of the aerospace, computer, medical industries and the US military. These high tech steels have been embraced by custom knifemakers in the US to create the finest one of a kind knives in the world. Our steel is produced using processes and techniques that were literally developed to make rocketship parts.
The high carbon chromium super steel produced for us has the perfect balance of all the qualities needed for ultimate in kitchen knife performance. With a very high carbon content, .95, the steel has superiour edge holding while still having excellent sharpeneablity. In comparison, a Wustof Trident has a a carbon content of .50%. Higher carbon content gives a knife better edge holding and sharpenability. The 15% chromium content gives it excellent stain resistance without sacrificing sharpenability. Other alloys give the steel superior toughness that will keep the blade from chipping or breaking if dropped. The Rockwell C scale hardness is 59-60. The blades are designed, engineered, and tested by Corey Milligan at New West KnifeWorks. Our Powder metal steel allows our craftsmen to accentuate the tapering of the blade to realize its maximum potential. The tapering from the spine to the edge lightens the knife and also allows for an incredibly fine edge. Further tapering toward the front of the blade gives extra bite where you begin most of your cuts. In the past you had to choose between toughness and sharpness, this very special material lets you have it all. The difference in the experience on the cutting board is profound.
Layers of fiberglass, cloth-expoxy are compressed and cooked into G10 sheets. The material is hand-shaped and polished around the knife tang and as the material is ground away, the layers of color reveal themselves in resplendent patterns The results are colors which seem to live and dance on a handle that is virtually indestructible. The only other folks who are combining this elite handle material with S35vn steel are the US Special Forces. Don't let the pretty handles fool you- these are the highest performance materials on the market- the icing on the cake is they are 100% USA made by skilled American craftsmen.
